About the coffee

This coffee comes from Janja Hill, a small producer community connected to Muzo Washing Station and part of a broader effort by Baho Coffee to rethink traceability in Rwanda. While most Rwandan coffees are blended at station level, this project focuses on isolating lots from specific hills and producer groups, making it possible to recognize distinct micro regions and the people farming them.

Janja Hill joined this initiative in 2023 and represents one of the smallest and most specific selections within the Muzo network. The contributing producers cultivate small plots at high elevations, often under similar environmental conditions. By separating their coffee at the hill level, it becomes possible to better understand how place, altitude, and local practices shape cup profile.

After harvest, cherries are delivered to Muzo and carefully sorted under shade, followed by flotation to remove lower density fruit. The selected cherries are depulped and undergo a double fermentation, first dry for 8 to 12 hours and then wet for another 8 to 12 hours. The coffee is then washed thoroughly in grading channels and separated by density.

Following fermentation, the parchment is soaked and transferred to raised drying beds. Drying begins slowly under shade before moving into full sun, lasting several weeks. During this time, the coffee is turned frequently and hand sorted to ensure even drying and stability.

Through this isolated lot approach, Janja Hill coffees highlight flavor distinctions that are often lost in larger blends. For Baho and the producers involved, this model creates a closer connection between farmers and buyers while supporting higher prices, additional post harvest payments, and long term collaboration built on transparency and recognition.
